When you add a new item in the custom dialog, you get the usual set of options about what sort of hyperlink it is (Site Page, Offsite link etc etc). Down at the bottom of that list there's "Title Only" (I think ... can't see WP where I am!). You can use this to create a dummy nav bar item that acts just as a title, and you can make other items children of that.

Yes, that is certainly it. Simple when you know how.......

Edit NavBar > NavType tab > tick Custom > select Page > Edit element > Hyperlinks > Title only.
